Roasted Pumpkin & Tagliatelle w/Alfredo Sauce (only the pumpkin and rosemary were local) 

Pumpkin tossed with olive oil, rosemary & salt, then roasted in oven at 400 degrees for 8-10 minutes (roasting the pumpkin removes the water bringing out the sweeter flavor of pumpkin).

Alfredo sauce is just whipping cream, Parmesan cheese, dab of butter, salt and black pepper (cooked on low flame & whisked until smooth and creamy).
