baked protein bar


ALICIA MARIE’S FAVORITE “BASIC” PROTEIN BAR RECIPE - 
2 scoops vanilla whey protein (any kind)
4 egg whites OR 4 squirts of Eggs International liquid egg whites
1 cup oat flour or 1 cup organic quick oats (you can make this recipe ‘gluten free’ by using gluten-free oats!)
1/2 Splenda for baking or Truvia or my personal fave – that amazing ‘Whey Low” sugar baking substitute found at Whole Foods markets.
Dash of vanilla *optional (if gluten-free is desired in your diet – use gluten-free vanilla)
1/4 tsp salt
1/2 tsp baking soda
8oz pear, apricot, apple or carrot organic babyfood (if you are making chocolate flavored bars go for apple)
1/2 package of Sugar-Free Butterscotch pudding (or vanilla or chocolate for whatever ‘flavor’ you are going for)
4oz water (just fill up an empty baby food jar, doh!)
Pre-heat oven to 350 degrees
Mix DRY ingredients in a large bowl: oat flour, whey protein, baking soda, salt, pudding powder
Mix WET ingredients in another bowl: egg whites, vanilla (opt), SUGAR SUB (yeah, it’s dry but so what), water, baby food
Add dry and wet and stir together. If mixture is too ‘thin’ or ‘wet’ add a little more oat flour – it should be fluid but not ‘runny.’
Spray a PYREX dish with non-stick butter cooking spray
BEFORE YOU POUR YOUR MIXTURE INTO THE DISH TO BE BAKED – DO YOU WANT TO TRY ANY OF THESE?
- shredded coconut
-mini chocolate chips (go easy!!) and sugar free chocolate pudding for a protein brownie
- dried blueberries or cranberries
- NUTS!
- If you use the carrot baby food, use shredded coconut, walnut pieces
- add organic rice crispies for a ‘crunch’
- anything!
Totally up to you. I have made some that taste HEAVENLY and others that my dog ran from.
One thing I do have to say is that in general – these are pretty tasty and not to mention portable snacks that you can carry with you to help keep you on track.
While they are admittedly quite delish – if you go in expecting them to taste like a Devil Dog, you have another think coming.
There are some amazing ‘NO BAKE’ protein bar recipes that I will post up manana.
Right now – it’s 6am – and I have YET TO SLEEP. O_o
